Place in the fridge for at least 4 hours, ideally overnight. Stir well and add walnuts to serve. If you are making overnight oats, consider making extra portions so you have breakfast ready for the week.
- 1/2 banana, mashed
- 1/2 cup oats
- 1/3 cup unsweetened almond milk
- 1/4 cup canned pumpkin
- 1 tsp. maple syrup
- 1/4 tsp pumpkin pie spice
- 1 tbsp walnuts
- Spray a large bowl with cooking spray. Mash the banana using a fork. Stir in all the remaining ingredients except the walnuts.
- Microwave on high for 2-3 minutes until oats are tender. and liquid is absorbed. Stir and top with walnuts.
