Pumpkin Oatmeal made right in the oatmeal in less than 3 minutes is packed with pumpkin flavor, filling, and made without refined sugar. This quick and easy Microwave Pumpkin Pie Oatmeal is the perfect fall breakfast made with canned pumpkin, rolled oats, and banana for natural sweetness.

Would this work for overnight oats?

Sure! This recipe works great as an option for overnight oats as well. Simply combine everything but the walnuts in a jar or airtight container. Place in the fridge for at least 4 hours, ideally overnight. Stir well and add walnuts to serve. If you are making overnight oats, consider making extra portions so you have breakfast ready for the week.


  • 1/2 banana, mashed
  • 1/2 cup oats
  • 1/3 cup unsweetened almond milk
  • 1/4 cup canned pumpkin
  • 1 tsp. maple syrup
  • 1/4 tsp pumpkin pie spice
  • 1 tbsp walnuts


  1. Spray a large bowl with cooking spray. Mash the banana using a fork. Stir in all the remaining ingredients except the walnuts.
  2. Microwave on high for 2-3 minutes until oats are tender. and liquid is absorbed. Stir and top with walnuts.
